Old Fashioned Baked Custard | Old School Recipes #9
This Easy Baked Egg Custard is not only a delicious comfort food but it is also a great way to use up milk! It is a rich, smooth and creamy custard that requires just a few ingredients. This is a recreation of my Great Grandma's recipe that my mom used to make when I was growing up. I didn't have the recipe in front of me so I made it based off of memory and it came out great!

Ingredients:
6 eggs
4 cups milk
2/3 cup sugar
1-2 tsp vanilla
1/4 tsp salt
nutmeg
cinnamon
Whisk eggs together in a large bowl. Add in salt, vanilla and sugar and mix together well. Heat milk and slowly pour into egg mixture while stirring. Pour into oven safe dish (I used two crocks). Sprinkle with nutmeg and cinnamon. Put about an inch of hot water in the bottom of another oven safe dish to create a water bath. Place dish with custard in the water bath and bake at 350 for 45-60 minutes or until toothpick inserted comes out clean.

Alicia, this brought tears to my eyes, FINALLY, someone who knows and understands what a baked egg custard means. I'm probably too old, but if anyone remembers Horn & Hardart, they will recall the egg custard in those little windows...in later years you could buy prepackaged little custard cups from this restaurant. We loved egg custard...good for kids and old ladies like me. Sending you love & hugs for the memories, gonna make this asap.

My grandmother made egg custard in a pre-made pie crust. She sprinkled a powder on top but it wasn’t cinnamon I don’t think. It was so good. I wish she was alive to make it again. I’m going to try to find her recipe. I’ve got them somewhere.

My mom used to make custard like this and would save half of the egg whites to make a meringue for the top and she would put left over rice in it and called it rice pudding :) she would let us eat it in the winter while it was still warm. Thanks for sharing your recipe :)

This was something my 100 year old grandma remembered her mother making for her growing up and as her caregiver it was something easy that I was able to make for her during the last few months of her life that she was always happy to eat, even when her dementia affected her appetite. We make this all the time in the carribean. You can also add condensed milk and custard power to jazz it up. Sometimes we steam it for 45min on the stove if you don't feel like lighting the oven. Great stuff.

I really loved it!!! Thanks for the recipe 💛. If anyone wants to make a slightly smaller version with stevia this is what I used: - 4 eggs - 2 cups of milk - 2 tablespoons of stevia - the rest is the same - I used 6 ramekins (9cm or 3 1/2 inch diameter)

My absolute favorite donuts are the custard filled ones, I think they are called Boston creams. They are chocolate with custard filling and now I really want one!🍩 Lol The water bath technique does help this to come out better! Hi Alicia, baked custard is one of our families favorites, it’s just a real comfort food! When my youngest Beau was a baby he loved it and would eat it all the time! I also like to add cinnamon but definitely going to try nutmeg next time! Just delicious, really enjoyed watching 🧡

I just watched your video instruction while searching for a baked custard recipe. I used one last week and baked it in a prepared pie crust. It turned out good, but I'd prefer just the custard without the pie crust. So, tonight that's what I was looking for when I found this recipe. I'm off to try your recipe!

I like how this is easier to make in comparison to flan. Plus, I don't have to deal with hot caramel. - Also, less calories. Haha Looks so creamy and delicious. We would enjoy this for sure. :-)

This is definitely a recipe that I can easily make sugar free and is carnivore friendly; I don't know why I didn't think of doing it before. Thanks for the great idea Alicia! Yours turned out great. When I was a kid we would make a similar custard filling to put in creme puffs with my Gram. I use to make cheesecake using water baths. Full watch, big like! 😊👍

Hi Vara! I was thinking I should have made this sugar free so that I could eat it! Lol I just made it for the kids since it isn't WW friendly. Cream puffs are so good, one of my favorite things! It is the same concept with this as it is for cheesecake when it comes to the water bath. I don't always do it because it is an extra step but it does make a difference. I make this all the time only I use 100% heavy cream and I only use 5 eggs. Turns out perfect every time. A water bath is a must.

Yummy I'm definitely going to try this recipe next time🤤, I normally just make custard on the stove top when needing to use milk up, my boys love it for a dessert! In addition to what Alicia said, the water bath also provides moisture to the custard and keeps it from cracking on the top of the baked custard.

Grew up on a Minnesota dairy farm. Milk was not a problem and was usually 4.5% whole milk. Mom had problems with her custard coming out sort of watery for whatever reason. I've seen some folks add a bit of corn starch which might fix that problem.

Just like you, i had to use two smaller baking safe containers instead of one big one, because i had to use the water bath, and i could not fit my smaller pan into my bigger pan, since my smaller pan is circular. I made custard all the time when I was younger, not sure why I stopped. I've recently had health issues that require a low fiber, high calorie diet and was racking my brain on what I could try that wouldn't make me sick. Custard popped in my brain so I searched and found your recipe. It's just like the one I always used and I'll be making it right away. I will be using whole milk, or maybe half and half to boost the calorie count. Thanks for the recipe and also for helping me finally decide to make the leap to cherry butcher block counter tops. I accidently ordered two dozen eggs in my online order today and was craving something sweet.. I had extra 1% milk as well and decided to make this at nearly 10 o'clock at night. I scalded the milk on the stovetop and mixed everything in the Kitchen Aid real quick. I'm having a scheduled cesarean in two days so I'm treating myself! I can imagine you buying gallons and gallons of milk. I am going through a milk phase myself. Milk is good! I loved that you used a scale. I do that all the time for layer cakes! BTW: Have you ever thought of buying powdered milk just for when you need milk but run out? I saw a video of Argentine chefs talking about boiling milk when making flan because people on the farm used to use unpasteurized milk, so they would have to boil it first. I have made flan with cold milk, and it turned out OK...have you ever made your custard with cold milk? Even though I am not big on nutmeg, I would definitely try this custard. BTW: Argentines love flan with dulce de leche and whipped cream, like my rice pudding, so I am sure your custard would be good with that as well. Thanks for sharing, Alicia!

It does look like flan! Looking forward to yours! We have been going through so much milk for a long time but somehow it caught up with us! Lol And I use the scale now because of you, it is a great idea! I have bought powdered milk before but really only used it to make bread. It's a good thing to have on hand, I should probably get more. And I have never tried using cold milk in this because I didn't know if they scalded the milk solely because milk used to be unpasteurized or if there was something to the milk needing to be warm too? @AliciaLynn Haha I am glad that my ways are rubbing off on other people! If you ever use cold milk, let me know how it turns out. Like I said, on "Cocineros Argentinos," they said it's not 100% necessary. "Mixto" is always good! BTW: I have a powdered milk anecdote. It is A LOT more popular in Chile and Argentina than here. The women with whom I stayed in Chile always had it on hand, and the grocery store has both (it's not like an afterthought here). I asked her why people use powdered milk so much, like in coffee, and she said "it doesn't make sense to add cold milk to a hot drink." She said it in such a way like it was obvious lol. Very funny...

Cool the milk down before you pour it in. Not necessary to cook the milk. You can use it right from the container. She is correct. Milk straight from the cow must be heated to kill bacteria. Thank you, Louis Pasteur.

I grew up on a farm with dairy cows, so there was no shortage of milk. My mother use to make custard pudding all the time. To this day, I love custard pudding. Sadly, you never find it anywhere, in stores, in restaurants. Very depressing.

I had actually got the ramekins for bread pudding. I'm single and they keep long enough in a plastic bag, refrigerated. I like the crusty part on top of bread pudding 😂. My custard came out great (I ate three since yesterday). Thx again for the recipe and nostalgia, again. 💕 God bless.

Please note: do not put a lot of water in your baking pan. I put too much and my custard turned out soggy.

Yes, you only want about an inch of water in the pan like I showed so that it doesn't come up the side of the dish too high and splash into the custard.

Hi Diane, I have never tried it myself so I'm not sure. I think that it might not set up properly but I might have to give it a try and see. I love this stuff but you're right, it is really high in WW points. I have a lot of recipes on my channel that I did before getting back on WW that might be fun to try and make more WW friendly, this would be one.

Hi. When you heated the milk in the microwave, how hot did you make it? I was wondering if pouring the hot milk into the egss would scramble them.

I just heat it for about 3 minutes to get it warm/hot. And yes too hot of milk or milk that was boiling, would probably start to cook the eggs which you wouldn't want. Thanks for watching!

My Grandma lived through the Depression Era. I stayed with her alot growing up. Many food's she made was still from back in that Era. She would regularly make either egg custard, rice pudding, or a Mayonnaise cake. And OMGOSH they All tasted soooo so good!! My mom had the original recipes My Grandma had wrote down. Through the year's they were lost, so I never knew how to make them. THIS!! Brings me back to my Grandma's kitchen! It taste exactly like her recipe! I can't thank you enough for sharing this!!

And how does the size of the baking container affect the baking instructions, or does the baking remain the same regardless of the size you use? Thanks for sharing this recipe; it is truly a delight. You are very right, they are indeed called ramekins! As for the baking time, it will vary slightly on the size you use. You want to bake until just slightly jiggly in the center but you can insert a knife in the center and it comes out clean. Thanks for watching!
